Potato Fritters

Potato Fritters Ingredients 2 large potatoes 4 eggs 2 tbsps cream 2 tbsp sweet wine 1 dessert spoon lemon juice 4 tsp grated nutmeg Method Boil potatoes then beat up lightly with fork Beat eggs, leaving out one of the whites Add eggs and other ingredients to potatoes. Blend into a very light batter Fry tbsp at a time until nice brown colour.

Vicarage Pudding

 Vicarage Pudding 1/4 lb flour 1/4 lb suet Tbsp raisins Tbsp currants Tsp sugar 1/2 tsp salt Mix ingredients well. Pour into a damp muslin cloth. Tie tightly. Boil  3 hours Serve sprinkled with sifted sugar More books

Potato Pudding 1/2 mashed potato 2 oz butter 2 eggs 1/4 pint milk 3 tbsp sherry Saltspoonful of salt Small lemon juice and rind 2oz sugar Add to mash butter, eggs, milk, sherry, salt, lemon, sugar Beat well. Put in buttered pie dish. Bake for rather more than 1/2 hour More food

Pease Pudding 1 1/2 pint Split Peas 2oz butter 2 eggs Pepper and Salt Soak peas in rainwater overnight Boil in rainwater until very soft Strain then push through collander Add butter, eggs, salt, pepper Blend well Put in tight tied muslin  Boil 1 hour Serve  More food

Mansfield Pudding

Mrs Beeton's Mansfield Pudding 2 bread rolls Pint of milk 4 eggs (whisked) 2 tbsp brandy 6 oz chopped suet 2 tbsp flour 1/2 lb (alternatively try raisins - ADF) 1/2 tsp grated nutmeg 2 tbsp cream (30ml - ADF) Slice rolls thin then pour over boiling milk Wait 1/4 hr then break up with fork and add sugar to taste then add other ingredients.
